No, but really.
Does anyone else have all their good ideas just as you wake up in the morning or as you are falling asleep at night? I have to keep a note book and pencil next to my bed for these random arrivals of new ideas or improvements on old ones.
Here is a prime example of one of those sleepy ideas:
Watch out though. If you do make this SUPER easy, quick, delicious, fresh, sweet and tangy “nice-cream” it could well be on high rotation in your household too!

Serves 2
Prep time: 5 minutes
NICE-CREAM
approx. 5 (550g) frozen bananas, peeled
1/3 cup (85ml) fresh passion-fruit pulp
2 tablespoons maple syrup
¼ cup (65ml) fresh lime juice
TO SERVE
½ cup (25g) coconut chips
1 tablespoon lime zest
Start by heating a non-stick fry-pan on high and add the coconut chips, stirring gently until lightly toasted. Remover from the heat and set aside.
Combine all “nice-cream” ingredients in a high speed food processor. Process on high until creamy and smooth in texture.
Spoon into bowls, sprinkle with toasted coconut chips and grated lime zest. Serve immediately. Enjoy!
