RECIPE: RAW VEGAN CHOC MOUSSE TART

As promised…

This recipe is Plant based, vegan, gluten free + raw
Crust
1 cup almonds 
1 cup medjool dates (or if not fresh medjool dates soaked dried dates)
1 tablespoon cacao powder
1 pinch salt 
Filling
2 tablespoons chia seeds
1 tablespoons cacao power 
3/4 cup medjool dates (or if not fresh medjool dates soaked dried dates)
2 cups almond milk 
2-3 Table spoons of coconut oil (Good fat!)
1 teaspoon vanilla essence 
1 pinch salt
Method 
Crust- Blend all crust ingredients in a food processor/blender until a slightly course yet sticky consistency is achieved. Press this into cupcake tins and up the sides to form cups. Place in freezer for 15-20 minutes.
Filling- Blend all filling ingredients on high until smooth. Spoon into crusts and place in the fridge for 2 hrs to set. 
To serve for some extra colour add sliced strawberries, mint leave, raspberries, dust cinnamon over top. Get creative. 
Its that easy.
Note: I made these for a friend who could not live without chocolate. She has a choc top at the movies, she has chocolate in her coffee, chocolate ice cream is her staple treat of choice as well as brownies and anything else chocolate and she LOVED these! That’s the tick of approval in my book!I hope you enjoy it too!
