I have been a busy bee today working on finishing Natural Harry’s new home www.naturalharry.com which I hope to be ready super soon. I always get a bit peckish while staring at a screen. Especially while studying. So today I decided to make my lovely friend some raw organic chocky from scratch and have some myself. She has a sweet tooth and loves all things chocolate so what better than some yummy walnut and chia seed superfood choc? Looks, sounds and tastes indulgent buy is actually a completely healthy and nourishing treat. Mind body and soul.
These delicious bites are packed with amazing nourishing good fats. Coconut oil stops sugar cravings, boosts your metabolism and slows aging, Walnuts are a super brain food (ever noticed they even look like a brain)and chia seeds among other amazing benefits area super high source of omega-3 fats. For more info on these see my blog post on Chia. Honey is antibacterial and anti-fungal.
Without further adieu here is my most recent successful invention:

100g or less of organic maple syrup
2 tablespoons chia
2 tablespoons chopped walnuts

1 tablespoon shredded coconut
X2 ice cube trays
What to do:
Melt the coconut oil using the double saucepan method and stir until melted. (Hint: melt at lowest possible temp).
Wisk your cacao powder into the oil and add your selected sweetener of choice ,Stiring well. Remove from heat and add coconut, walnuts and vanilla. stirring well. Stir in chia seeds and immediately pour into ice cube trays and place in the freezer for 1 hr or more. Transfer to fridge for storage.
The mixture of coconut oil and cacao is an amazing sustained energy booster and if eaten in the morning will give you extra energy for the day while maintaining steadier blood sugar levels.
Enjoy. Happy Monday!
