RAW VEGAN BRUSCHETTA TACOS


Makes 9-10 tacos

All you need is:



For the filling:

1 red onion
4 cloves garlic, minced
1 Bunch basil
5 Vine ripened tomatoes
1 red capsicum
2 handfuls kalamata olives pitted
4 button mushrooms
3 tbsp olive oil
3 tbsp apple cider vinegar

For the shell:

1 iceberg lettuce

For the tangy sauce:
2 avocados
Pinch if pepper
1 lemon juiced

All you need to do is:
Chop onion finely
Mince garlic and add to onion
Shred basil and add to garlic and onion
Add vinegar and olive oil in and stir
Dice tomato, red pepper olives and mushrooms and stir all ingredients together

Mush 2 avos
Juice lemon and stir well into avo

Gently peel off layers if lettuce to create shells.
Lay out and spoon filling into each
Spoon on avo dressing and sprinkle with cracked pepper


Serve and enjoy!
