Makes: 1 1/2 cups Prep time: 5 minutes Difficulty: Very easy
1 1/2 cups (225g) cherry tomatoes 1 red capsicum 1/3 red onion 1 tablespoon fresh coriander 1 tablespoon coconut aminos 1 small lime, juiced
Finely dice cherry tomatoes, capsicum and onion. Chop coriander. Combine all ingredients in a bowl and stir well. Serve immediately.
