FRESH SALSA | versatile & delicious

Nothing beats the flavour of real, fresh, straight from the earth fruits and veggies, especially of the homegrown variety. Tomatoes are no exception and the quality of tomatoes that you use for this salsa will make all of the difference. Choose organic where possible, the richness in colour and flavour will lift the whole meal or platter. I love adding this fresh, yummy salsa to any Mexican style dish that I make.

Makes: 1 1/2 cups 
Prep time: 5 minutes   
Difficulty: Very easy
1 1/2 cups (225g) cherry tomatoes
1 red capsicum 
1/3 red onion
1 tablespoon fresh coriander 
1 tablespoon coconut aminos
1 small lime, juiced  
Finely dice cherry tomatoes, capsicum and onion. Chop coriander. Combine all ingredients in a bowl and stir well. Serve immediately.
