Nothing beats the flavour of real, fresh fruits and veggies. Especially of the home-grown variety. Tomatoes are no exception and the quality of the tomatoes you use for this salsa will make all the difference. Choose organic where possible. The richness in colour and flavour will lift the whole meal or platter. I love adding this fresh, yummy salsa to any Mexican style dish I make.
Makes 1 ½ cups

Difficulty: Very easy
1 ½ cups (225g) cherry tomatoes
1 red capsicum
⅓ red onion
1 tablespoon fresh coriander
1 tablespoon coconut aminos*
1 small lime, juiced
Finely dice cherry tomatoes, capsicum, and onion. Chop coriander. Combine all ingredients in a bowl and stir well. Serve immediately.
