EASY ‘CHEESY CRUST’ PIZZA | simple & tasty

I am super excited to share my very first recipe video with you all! Featuring one of my absolute favourites from my recipe book. I am all about the ease and enjoyment when it comes to cooking and this recipe is no exception. All ingredients are super easy to find and full of flavour. I hope you love the video.

Makes 2 small pizzas

Preptime: 25 minutes

Cook time: 30 minutes

Base

4 good quality gluten-free wraps or thin pizza bases

3 cups (450g) sweet potato, peeled and diced

1/2 cup nutritional yeast

pinch salt

Tomato paste

2 cups semi-dried or sundried tomatoes

1 teaspoon coconut sugar

1 clove (10g) garlic, peeled

1 teaspoon dried oregano

3 tablespoons water

Toppings

½ Spanish onion finely diced

½ cup (65g) olives, pitted and sliced

½ cup (40g) mushrooms, diced

½ cup (70g) red capsicum, finely diced

½ cup (35g) curly leaf kale, stalks removed and chopped

½ cup (20g) basil leaves, roughly chopped

 

Pre-heat oven to 180°C/356°F fan forced.

Using a steaming basket, steam sweet potato until soft right through. Place in a bowl, add nutritional yeast and salt and mash until smooth.

Spread two wraps with the mashed sweet potato before gently laying another wrap over the top of each and pressing down gently, especially around the edges.

Place all the tomato paste ingredients in a blender or food processor. Pulse to combine, then blend until evenly mixed. Spread this mixture over the top of the layered wraps.

Sprinkle with onion, olives and red pepper and bake for 10 minutes. Remove from the oven and add mushrooms, kale and basil. Return to oven and bake for a further 10 minutes. Slice and serve!

 

Check at your local health food store or online for some “nutritional yeast” as it really adds that cheesy/nutty flavour to the delicious sweet potato filled crust.
