DREAMY MATCHA MINT CHOC-CHIP NICE-CREAM | refreshing & so tasty

Sorry for my short absence lately guys. I have had my head buried in books planning the next step for Natural Harry and lately organising for a workshop I am co-hosting which will be super fun.

I am dropping in today to bring you my new favourite, delicious and refreshing treat.

You will love its refreshing taste and creamy texture. The absolute best thing about it though? It is so damn easy to make.

Serves 2 people (generous serving – because if it is made out of nourishing goodness why the hell not?)

You will need:

400g frozen ripe bananas

1/4 cup coconut milk

pinch vanilla powder

1 drop peppermint oil (food grade and organic – ask at your local health food store if you do not have some in the cupboard, get some, it also makes epic peppermint chocolate!)

2 heaped teaspoons matcha powder (again, your local health foods store should have it or try an asian grocer. It is basically ground Japanese green tea. So, so good for you!)

2 tablespoons cacao nibs

1 tablespoon maple syrup, optional (make sure it is the real stuff from Canada, the imposter versions are about as related to the real stuff as crocodiles are related to bunny rabbits)

How to make:

Throw all of the ingredients except for the cacao nibs in your food processor. Pulse to combine and blend on high until a smooth, thick, ice-cream texture is achieved.

Stir in the cacao nibs and serve!
