Yesterday while sipping on a delicious almond milk kefir (a probiotic drink made by fermenting milk with good bacteria) it occurred to me that before I post the recipe for this amazing beverage I had better first show you how to actually make the almond milk. Of course you can find good organic store bought stuff, but If you want to go the whole hog and make it from scratch here’s how: (p.s its really easy)
Ingredients:
2 cups raw almonds ( do not use roasted as this will not work. Blanched will not work either. Buy them raw and rinse them)
6 cups cold filtered water
1 date or 1 Tablespoon real maple syrup
dash of cinnamon ( optional)
Nut milk bag (muslin cloth or you can use a cheesecloth or a really large tea towel)
Method:
Soak almonds in water over night, rinse and drain in a colander.
Add the 6 cups of filtered water and blend on low to combine and then high to create a smooth liquid texture.
Pour the mixture through the nut milk bag over a bowl. Do this slowly, squeezing the bag as you go until all the liquid is through the bag and you are left with the pulp.
Store the milk in an airtight glass jar in the fridge.
So, you can see that just 2 cups of almonds make a lot of milk. You can use the pulp for raw deserts, bliss balls or in cooking. Recipes coming soon!
