5 MINUTE NOURISH BOWL | speedy goodness

This has been my go-to easy peasy lunch and dinner lately. It is one of those meals that just leaves you feeling so good. The good fats and proteins in the hummus, probiotics in the sauerkraut and alkalising mineral rich veggies are a great combo and tasty!

If I were to give it a fancy name I would call it a buddha bowl of spiced broccoli rice, sautéed herbed mushrooms, hummus and purple sauerkraut. But I’m not that fancy and it took 5 minutes to make so lets just call it a yum bowl eh?

1 head broccoli, cauliflower or Romansco

1 cup mushrooms, sliced

2 tablespoon sauerkraut

2 tablespoons hummus

3 cloves garlic, peeled and finely diced

small handful lean thyme or rosemary, stalks removed

1 teaspoon each turmeric and cumin, ground

salt and pepper to taste

small handful parsley to serve (optional)

dash coconut aminos (optional)

Pulse broccoli in food processor with 1 clove garlic until a rice like texture is achieved. Add spices, salt and pepper and sauté until warmed through. Mean while, in a separate pan, sauté the remainder of the garlic, mushrooms and herbs until browned.

Spoon mushrooms and broccoli rice into a bowl, add the sauerkraut, hummus and any remaining herbs and finish with a dash of coconut amigos. Voila!

Simple, delicious, fresh and nourishing.
