3 INGREDIENT MANGO LIME PROBIOTIC CREAMY POPS | easy & refreshing

Hey legends!

Here are my new favourite refreshing, gut loving recipe to store in the freezer for toasty days like we are experiencing today.

Enter my 3 ingredient probiotic popsicles. They are not too sweet (though you can sweeten further if you like – see the cooks notes), super creamy and melt-in-your-mouth-delicious. Not to mention tangy as all get out!

Prep time: 5 minutes 

Makes 8-12 popsicles depending on the volume of your moulds – mine are 100ml each 

Ingredients:

3 ripe mangoes, peeled and pitted (hot tip – youtube how to peel a mango!)

1 1/2 cups coconut yogurt, store-bought or home-made (I have a recipe!)

1/4 cup fresh lime juice

Method:

Throw all of it in your blender, pulse to combine and blend until it is super smooth and creamy.

Give it a little taste to determine if there is enough tangy fresh lime juice for your taste and adjust to taste.

Pour the mixture into ice-block moulds, add some paddle pop sticks and place in the freezer overnight to set.

If your feeling a little crazy organisation spell coming on, double the quantity and you will be set for summer!

Cooks notes: 

Quantities – One of the beauties of this super simple recipe is that you can increase or reduce the quantities of each ingredient to your liking. Much like a smoothie. This recipe is not an exact science.

Mango – If you have a high speed blender available to you, you can also sub the fresh mango for frozen and still produce a super creamy result.

Sweetness – If you would like to increase the sweetness of this recipe I recommend adding a touch of real maple syrup. A couple of tablespoons will do the trick to cut through the tang of the lime., Up to you though. I really like that these are not super sweet.

Additions – Gosh, where to start there are endless possibilities here. I love the simplicity of this recipe but you can also always use it as a base,go a bit rouge and have fun with it. Vanilla is a lovely addition, as is passionfruit or berries (fresh or frozen) Kiwi fruit produces an epic colour as does creamy ripe avocado and a touch of maple. Have fun!
