You know how I always have a “go-to” easy meal on the go?
Well, this is the current one and I thought I should share it with you! It is so delicious, filling and one of the easiest ever!
Perfect for a quick throw together lunch or dinner. An easy way to pack in all of those amazing, cleansing greens, some good healthy fat, and great quality plant-based protein.

Prep time: 5 minutes
Cook time: 10 minutes
SALAD
400g button mushrooms, roughly sliced
2 cloves (90g) garlic, finely chopped
1 tablespoon (30g) ginger, grated
200g firm tofu, drained and sliced
2 tablespoons ponzu sauce (or tamari sauce)
400g butter lettuce and/or mixed greens
1 medium (190g) ripe avocado
4 tablespoon coconut aminos
OPTIONAL TO SERVE
1 tablespoon sesame seeds
sliced lemon
Combine tofu, mushrooms, garlic, ginger and ponzu sauce in a non stick pan and fry on medium to high heat until cooked through.
Combine ½ the avocado, lettuce and coconut aminos in a large bowl and massage with clean hands until all avocado mixed in.
Divide the salad between two bowls, top with fried mushrooms and tofu and the other half of the avocado. Sprinkle with sesame seeds and serve with a wedge of lime. Enjoy immediately!
